It’s Summer time and when that Summer sun beats down through our window, the last thing we want to do is make steaming hot food. During this time of year we are finding ourselves gravitating toward chilled dishes in our kitchen. To keep our summer days on the cool side, we recently whipped up a fun and easy recipe that we have been loving. Whether you’re on the go, feeding the kids, or just want something healthy and easy, this recipe is going to be perfect for summer time. Let Danziger introduce your new summer treat: Strawberry soup. Yes, it sounds weird. Strawberries in soup? But trust us-It’s delicious and refreshing.
Dairy or Parve:
1 large peach or nectarine-peeled and sliced
1 pint of strawberries
1/2 cup of sugar
2 tsp of lemon juice
1/2 cup of plain yogurt
1/2 cup of sour cream- or 1 cup yogurt or parve sour cream instead of 1/2 soup cream and 1/2c yogurt
Puree fruit until smooth. Add remaining ingredients and blend 30 seconds. Taste (may need more sugar if fruit isn’t sweet).
This is also great in the form of a smoothie as well!
